This Instant Pot Pumpkin Chili is the perfect warm and cozy dish for winter! And best of all it is AIP and there are zero nightshades!
I can’t think of a better way to kick off this January Instant Pot series than by sharing my favorite Pumpkin Chili made without beans and nightshades!
I just love broths, soups, stews, and hearty comfort foods. Ever since I went AIP (Autoimmune Protocol) and stopped eating nightshades, I thought my days of enjoying chili were over.
Chili is such a hearty and flavorful comfort food. The thought of giving it up made me sad. But, how do you have chili without tomatoes, warming red spices, cheese, and beans? Aren’t those the main ingredients that make chili taste and look oh so good! The good news is you don’t need tomatoes, warming red spices, cheese, or beans to have a satisfying bowl of chili! This Paleo Pumpkin Chili is AIP, Whole30, and has all the cozy flavors you love without nightshades, dairy, or legumes! And best of all it tastes out of this world amazing!
I didn’t believe it until I tried it myself, but pumpkin is so amazing in chili. Even though Pumpkin is used a lot in many sugary and sweet treats, pumpkin is still a vegetable and tastes great in savory recipes too. And who says that you can’t enjoy pumpkin even after Pumpkin Season is over?
But, even if you have non-AIP or Paleo family members in your house, I promise that they will still love this chili. My husband is a spice, bean, and tomato enthusiast and he still loved how cozy and hearty this chili was. And of course, you can always layer on additional toppings for those who tolerate them.

- 1 lb. Ground Chicken (sub beef or turkey)
- 1 Yellow Onion, chopped
- 3 Garlic Cloves, minced
- 2 Cups Sweet Potato, chopped
- 1 Cup Pumpkin Puree
- 2 Cups Chicken Broth
- 4 tsp. Lime Juice
- 1-2 tbsp. Fresh Cilantro
- 1/2 tsp. Turmeric
- 1/2 tsp. Cinnamon
- 1 tsp. Oregano
- 1 tsp. Sea Salt
- 1/2 tsp. Black Pepper (omit for AIP)
- 1 Avocado, diced
- Place olive oil into the bottom of the Instant Pot. Set instant pot to saute and brown the ground chicken.
- Once the chicken is browned, add the remainder of the ingredients (reserving the fresh cilantro and avocado) and stir until combined.
- Place the lid onto the Instant Pot and flip the knob to sealing. Cook on manual for 30 minutes.
- Quick-Release the pressure. Remove the lid and serve with fresh cilantro and avocado, if desired.
