Beets in your Latte! I’m sure you are thinking Val, have you lost your mind? I promise you that I have not! But, I have definitely lost my heart to this beautifully perfect Beet Latte.
While adding veggies to your morning beverage may not be the first thing you would think about reaching for in the morning, this Beetroot Latte is sweet, smooth, and earthy. Using a roasted beet in this recipe brings out all of the sweetness from this red vegetable.
What are the health benefits of Beets?
This Beet Latte is more than just beautiful to look at. Beets are considered a superfood and their anti-inflammatory benefits have been recorded since the Middle Ages. Beets are loaded with Vitamin C, Iron, and Folate. Numerous studies have shown that beets may increase energy, improve athletic performance, and reduces blood pressure.
Beets are also filled with antioxidants and have an anti-inflammatory effect on the body. If you are someone who has an autoimmune condition, I’m sure you enjoy those benefits.
Is There Any Caffeine in the beetroot latte?
Unlike ordinary Lattes, that consist of milk and coffee, this Beet Latte contains zero caffeine and only uses beetroot to give you the energy that you need.

What does it taste like?
I can honestly tell you that this Beet Latte tastes amazing! I haven’t always been a fan of beets, but, this Beetroot Latte has changed my world as well as my taste of beets for the better. The best way to describe the taste is it has an earthy, sweet taste and it also has some warmth from the spices and the beets.
How to Make Beetroot Latte
I have seen Beet Lattes made several different ways. Some people prefer to use an actual beetroot, cook it up, and then blend it up into the coconut milk with the rest of the ingredients. And some just prefer to use Beetroot Powder. I am going to show you how to make it both ways.
Preheat the oven to 400 F. Place the beets onto a sheet pan and into the oven. Roast the beets for 20-25 minutes or until you can pierce them with a fork.
Remove the beets from the oven. Allow them to cool for at least 10 minutes. Cut the beets into chunks and transfer them to a blender along with 1 cup of water and blend until smooth.
Heat the Coconut Milk and Coconut Oil in a medium saucepan until warm. Stir in the cinnamon, ginger, collagen, and honey. Whisk until everything is fully incorporated and remove from the heat.

Place a fine-mesh strainer over the saucepan and pour the beet mixture through the strainer. You can use a spoon to push down the pulp to draw out any excess liquid. Whisk until everything is combined.
Pour the Beetroot Latte into 2 mugs. Serve warm topped with additional cinnamon and Himalayan Pink Salt, if desired.

Can I make this latte with beet powder instead?
If you are short on time or if you just don’t like to mess with beets, there is a shortcut version. You can just use Beet Powder instead of an actual Beetroot. All you would need to do is just follow the recipe below and substitute the beetroot with 2 tbsp. of Beet Powder. Your Latte probably won’t be as thick but it will still be delicious.

- Pinch of Himalayan Pink Salt
