Last night for dinner we had Herb Butter Tilapia. The bad news is that there are no pictures for this one because my camera batteries died. So it looks like this post will be short and sweet. But the dish was still awesome and worth sharing!
This recipe is inspired by all those times I have gone to a restaurant and have ordered fish and it tasted AMAZING and flaky. I think I may have figured out the secret!
Herb Butter Tilapia
4 Tilapia Fillets
1/2 Stick Dairy Free Butter, softened
2 Cloves Garlic
1/4 tsp. Cilantro
1/4 tsp. Oregano
Salt and Pepper, to taste
Preheat the oven to 400 F. Place butter, garlic, cilantro, and oregano in a food processor and process until well blended.
Place the Tilapia in a baking dish lined with foil. Sprinkle with salt and pepper. Spread the herb butter mixture over the fish.
Bake for 15 min. or until fish flakes easily with a fork.
One the side we had Roasted Asparagus and Rice.
