I’ve been dealing with a stuffy/runny nose and a cough since Friday. But the good news is I’m on the mend and it’s not as bad as usual. Usually this kind of thing for me is much worse, turns into a Sinus Infection/Upper Respiratory infection kind of thing, and it knocks me out for a week. I’m feeling pretty good, not 100% but well enough to be up and around. I’ve been doing various home remedies to knock this thing out. Mostly Elderberry Syrup, Tea, Essential Oils, etc.
When I started feeling this way on Friday, I immediately thought about my famous Ginger Lemon Chicken Noodle Soup. I love eating soups/stews this time of year, but I especially love it when I am sick.
I also made the decision on Friday that I was just going to take it easy this week and rest. Even though I’m feeling good, I don’t want to push myself and make it worse. So I won’t be posting much on the blog this week. I will mostly be working on behind the scenes stuff for the blog, and hanging out on social media.
Now on to the recipe! My Ginger Lemon Chicken Noodle Soup is so comforting when you are sick. It feels great on the throat when you have a sore throat, and it just warms up your entire body and is just comforting.
Ginger Lemon Chicken Noodle Soup
4 chicken breasts, chopped
GF Linguini or Spaghetti
Juice & Zest of 1 Lemon
1 tsp. Fresh Ginger
Dice the chicken into cubes and place in a large stock pot with olive oil. Cook the chicken until fully cooked and no longer pink.
While the chicken is cooking, place lemon zest, ginger, and cilantro in a bowl and mix together. Set aside.
Once the chicken is fully cooked add the broth and lemon juice and bring to a boil. Add in the noodle and cover. Let simmer until the noodles are fully cooked.
Add the green onions before serving.
