I am so excited to share this recipe with you today! Boy am I excited! But first I must tell you about the amazing gift my husband got me for our 10 year wedding anniversary.
HE GOT ME AN ICE CREAM MAKER!!!! I’ve always wanted one. On July 8th we celebrated 10 years of wedded bliss. In the past, I’ve tried the no churn method for making Ice Cream & Frozen Yogurt and it never turned out well. Plus the Dairy Free Ice Cream & Frozen Yogurt section at the grocery store is very limited. Now I can make any flavor I desire.
The first time I used my Ice Cream Maker I made Green Tea Chocolate Chip Ice Cream which didn’t taste as well as I was hoping. But with my 2nd attempt, I would say it turned out pretty awesome! BERRY BANANA SWIRL FROZEN YOGURT! YUM!!!!
I have always preferred Frozen Yogurt over Ice Cream. When I gave up dairy 3 years ago, the hardest part was giving up the delicious frozen yogurt at our local frozen yogurt shop. They had the best frozen yogurt and pretty much every topping you can imagine. But now I can create my favorite flavors any time I want!
Berry Banana Swirl Frozen Yogurt
3 Cups DF Plain Yogurt
1/4 Cup Coconut Sugar
1 tsp. Vanilla Extract
1 Cup Strawberries, diced
1 Cup Blueberries
1 Banana, chopped
In a small bowl, whisk together the yogurt, coconut sugar, and vanilla until smooth.
Place this mixture into your ice cream maker and churn the frozen yogurt according to the instructions. When the frozen yogurt is done churning, divide the mixture. Place 1 cup of the mixture into a container and place into the freezer.
Place 1 cup of the frozen yogurt into a food processor with the strawberries. Pulse until mixture is combined and some strawberry chunks remain. Transfer the mixture to a bowl. Add in the chopped bananas and set aside.
Place the remaining 1 Cup of the frozen yogurt into the food processor with the blueberries. Pulse until the mixture is combined and some blueberry chunks remain.
Spoon the strawberry frozen yogurt and blueberry frozen yogurt randomly on top of the plain frozen yogurt. Use a knife to gently swirl the yogurt. Freeze the yogurt for about 2 hrs.
When ready to eat, top your frozen yogurt with any of your favorite toppings. I had some leftover strawberries so I made a strawberry sauce & toasted coconut to put on top.
